Finally! I bought a watermelon today and it was ripe and sweet and perfect! The right texture and flavor make watermelon wonderful. Late June through August is the best time to buy the biggest melon you can find.

After muscling the massive watermelon into my cart, I found these adorable golden kiwis. The fact that they were not as green as most thrilled me. Golden Kiwis are substantially sweeter and less acidic than green ones.

Of course, you can use regular kiwis. As long as your watermelon is extremely sweet they should pair just fine!

For my older child, I froze this in the Twist bags and brought them to the beach with us. So much easier than bringing actual melon, and the ice cold pouches kept our waters cold! They were a huge hit with kids from 1 year to 35…ok the 35 year old was me. The point is my 11 year old and his friends loved them too!

Make these edible ice packs for your next beach trip and you will not be disappointed!
