I know what you are going to say… you can’t give babies nuts… but that is a debatable statement. Doctors now are saying, if you have no familiar signs that point to potential nut allergies, you can consider feeding baby nuts earlier than the one year mark. If you are considering feeding a baby under one nuts, I highly recommend talking to your babies doctor and making the decision together. That said, if your baby is over a year and has no signs of nut allergy, you both are going to love this protein packed oatmeal! This recipe is so easy to put together, and such a complete meal for a growing child.

If you are apprehensive about the almond butter, feel free to leave it out! The toasted oats provide a slightly nutty flavor and the recipe will not suffer at all from the omission.

Banana Nut Oatmeal
Almond butter meets banana and smooth toasted steel cut oats in this complete breakfast for your little one!

Ingredients

3 large Bananas

3 tbsp Almond butter

1 cup Steel Cut Oatmeal

2 cup Milk or Almond Milk

3 cups water

2 tbsp Butter or Earth balance

1- Heat a large sauce pan over medium high heat and add the butter. Allow it to melt. Add the Steel Cut Oats and stir them in.

2- Allow the Oats to toast, darkening in color one or two shades. They are done when they smell slightly like popcorn. This should take between two and five minutes. Stir occasionally for an even toasting.

3- Add the 3 cups of water and bring to a boil. Reduce heat and simmer on medium, stirring occasionally.

4- In a food processor add the Almond Butter, bananas, and one cup of the milk. Blend until smooth.

5- Once the oatmeal starts to thicken, about 30 minute, add the extra cup of milk. Stir well and continue cooking.

6- Once the oatmeal has softened and is about where you would enjoy it, add the banana and milk mixture and reduce heat to low. Cook an extra 15 minute.

7- Allow the oats to cool and blend adding a tbsp of water or milk at a time to achieve a smooth easy to process consistency.
