This! Cucumber, melon, and mint make a great cold soup, but here we will omit the mint and give baby a nice dose of veggies and fruit in the mildest of forms.

Choosing a sweeter melon will make this recipe even better. Do not be afraid to sub out the honey dew for cantaloupe if you find a better piece of fruit, but know the color may not be as appetizing.

 

 

The best part of this recipe is that on a hot summer day you can just throw this frozen pouch in the diaper bag and go! Once it has started to thaw a bit, serve icy cold for a frozen treat baby will love. You may have a hard time sharing, so you might want to bring an extra for yourself.

Cucumber and Melon Puree
This flavorful favorite can be served half frozen for an icy treat baby will love!

Ingredients

1 large Cucumber

2 cups Diced Honeydew Melon

1- Start a large pan on the stove top filled with hot water. Set to high and bring to boil.

2- Chop cucumber into chucks and place in metal colander. I do not seed or peel the cucumber, baby gets it all!

3- Place colander in boiling water and allow to par boil for 1 minute.

4- Remove and place in ice bath for 1 minute and allow to cool. Remove from water and drain. Move the cucumbers to the blender.

5- Repeat the last 3 steps with the honeydew melon. If making a tiny batch you can blanch the melon and the cucumber together. I could not because I have a smaller metal colander. I don't dump the boiling water or the ice bath between batches.

6- Now blend the two together and marvel at the beautiful color green it turns!
