Peaches just may be the perfect food. Obviously not the rock hard ones they try to sell us in January, but ones that ripen on the tree in July and August. The peaches the size of a baseball that smell like honey and drip down your arm when you bite into them.

I prefer them juiced and added to a champagne flute on a Sunday morning when the kids are at Grandmas and the only thing on my to do list, is a nap.

This is a perfect snack for the car loop line. I have often handed this blend to my nine year old on our way to practice. When creating this recipe I took the leftovers and added a scoop of protein powder and enjoyed it myself.

We are not blanching the peaches or bananas for this recipe, though you certainly can for added safety if you are feeding this to a child under 9 months. Also you may want to substitute the coconut milk for water in younger children or households with known nut allergies. While the vote is still out on whether a coconut is a tree nut, or a fruit, we are always better safe than sorry when it comes to our kids.

Ingredients

3 large Bananas

3 large Peaches

1/2 can Coconut Milk optional

1- Wash the peaches well with water as we are using the skins in this recipe. The skin holds a lot of the peach flavor and fiber.

2- Peel your bananas and cut into thirds.

3- Cut and core the peaches. I have found, if you slice a peach all the way around you can twist it and get a clean half and a pit half. Digging out the pit is an easy task from this point. Once the pit is removed, cut them into one inch chunks.

4- Shake your coconut milk, if you are using it. Make sure you get the fat and water well blended.

5- I am using the food processor for this blend to ensure the peach skins dissolve. Add all the fruit to the processor and start the blend, adding a small amount of the coconut milk at a time to achieve the smoothest consistency.
