Blue foods for kids these days, means that ugly blue raspberry color, and I am not even sure what that comes from! But not this baby food.

This is 2 pints of blueberries, blanched quickly for safety and blended up right for the most delicate of flavors. If you do not blanch the berries you will not get the color blue as bright, and the skins of the berries will not break down the way they do for me here. I am a fan of blanching baby’s food for the first few months. The bacterial outbreaks we have seen from even the most responsible fruit and veggie packagers make me nervous, so I figure its the best way to be sure. You are still avoiding the citric acid in conventional baby foods, which is harmless according to the center for Food Safety. It still seems a bit counter intuitive though, being that baby’s are not recommended to eat any citrus for first 9 months. So lets get started!

Ingredients

1 pints Fresh Blueberries

3 cups Applesauce

1- Set up your blanching station as you did with the greens. One pot boiling, One pot filled with ice water in the sink.

2- Place your washed berries in the colander and place in the boiling pot. Allow to cook for 3-4 minutes. You will see the skins begin to break down and the berries will turn a deep shade of blue.

3- Remove from boiling water and place in the ice bath for 30 seconds.

4- Transfer to the blender and add the applesauce. Blend until smooth.
